| 1/3 cup | Master Mix (see page Mixes-7) |
| 1/4 cup | grated Parmesan cheese |
| 1/8 teaspoon | pepper |
| 2 | eggs, beaten |
| 2 cups | zucchini, shredded (2 small zucchini) |
| 1 tablespoon | margarine |

Instructions |

- fork to beat eggs
- grater

- In mixing bowl, stir together Master Mix, cheese and pepper.
- Stir in beaten egg just until mixture is moistened.
- Fold zucchini in to the Master Mix mixture.
- In frying pan, melt margarine over medium heat. Place 2 tablespoons of the zucchini mixture int he frying pan for each 'round'.
- Cook for 2 or 3 minutes on each side or until golden brown. Serve warm.
