| 1/2 pound | ground beef |
| 1/2 cup | onion, chopped |
| 1 (8 ounces) can | refried beans |
| 1 (6 ounces) can | tomato paste |
| 1/4 cup | water |
| 1/2 teaspoon | chili powder (optional) |
| 10-12 | tortillas (6 inch) |
| 1 cup | shredded cheese |
| 2 cups | shredded lettuce (optional) |
| 1 cup | fresh tomatoes, chopped (optional) |
| 1/2 cup | green peppers, chopped (optional) |
| | Taco sauce (optional) |

Instructions |

- Brown ground beef in frying pan. Drain excess fat.
- Add onion to ground beef and cook until onion is clear.
- Add refried beans, tomato paste, water and chili powder to beef mixture. Mix thoroughly and cook until warm stirring constantly.
- Fill tortillas with meat and bean mixture and fold over. Place in baking dish. Bake at 350¡F for 15-20 minutes.
- Sprinkle cheese on top and bake for an additional 5 minutes or until melted.
- Top with lettuce, tomatoes, green pepper and taco sauce, if desired.

| NOTES: Variation: To lower the calories, fat and cholesterol, omit the meat.Medium fat ground beef was used in the analysis; calories and fat would be lower if lean ground beef were to be used. |
